Margherita Pizza Recipe

Pizza originated in Naples. True Neapolitan Pizza is Pizza Margherita, pizza dough made from a specific recipe with OO flour, San Marzano tomato sauce, Mozzarella di Bufala, fresh basil leaves, and baked at 48 C degrees. This recipe is DOCG: Denominazione di Origine Controlla e Garantita, a stamp of approval given by Italian government to protect wines and food made according to specific traditions. There are other pizzas served in Naples but the Margherita is considered true pizza.

INGREDIENTS

  • Pizza dough
  • Flour
  • Red sauce
  • Fresh mozzarella
  • Basil

KITCHEN TOOLS

  • Cutting board or pizza peel
  • Pizza stones or cookie sheets
  • Spoon

PREP

PREP TIME: 5 MINUTES & ASSEMBLE & COOK TIME: 15 MINUTES

STEP 1: Preheat oven to 500 degrees with a pizza stone or cookie sheet (1 on each rack for each pizza). Preheat for at least 30 minutes before baking. Take pizza dough out of refrigerator and let sit for 10-15 minutes before stretching. Place hand-stretched dough on floured cutting board or pizza peel. Assemble your pizzas one at a time and remember to save half of the ingredients for the second pizza.

STEP 2: Pour the red sauce in the center of the dough. Using the back of a spoon, spread the red sauce over the dough with your border a 1/2" from the edge. Don't get any red sauce on your board, or your pizza will stick when sliding into the oven.

STEP 3: Place the basil leaves onto dough. You may leave basil leaves whole or tear into smaller pieces if you prefer. Sprinkle the mozzarella pearls evenly onto dough.

STEP 4: Slide topped pizza from your cutting board or pizza peel onto your first pizza stone or cookie sheet. Technique: Hold your peel or cutting board near your pizza stone at a slight angle. Using your wrists, shake the board back and forth until it's loose enough to slide onto your pre-heated stone. Assemble second pizza and repeat. Your first pizza will be done a few minutes before your second pizza.

STEP 5: Cook pizza 8-12 minutes or until desired crispness and golden-brown. Let pizzas cool 2-4 minutes.

STEP 6: Cut pizzas into desired amount of slices. Enjoy your pizza!
