Campania’s History Influenced Delicious Italian Cuisines

Campania had some of the earliest settlements of Italy and was originally inhabited by the Greeks. Naples is the largest city in the region. The word Compagnia in Italian means countryside. This area produces some of the most notable dishes of Italian cuisines due to its strong agricultural industry. Naples and Campania sit in the shadow of Mt. Vesuvius. Its rich fertile soil contributes to amazing products. In addition, this area enjoys a nice mild climate so the growing season is long. Campania produces much of the food for the rest of Italy.

Campania is known for growing lemons, vegetables and in particular tomatoes, most famously the San Marzano, which are grown in the volcanic soil on the southern slopes of Mt. Vesuvius. They are thin skinned and perfect for sauces. Campania is also known for cheeses most notably Mozzarella di Bufala; soft, creamy cheese made from the milk of water buffaloes.

Vero’s Famous Margherita Pizza Included In Custom Meal Kits

Pizza originated in Naples. True Neapolitan Pizza is Pizza Margherita, pizza dough made from a specific recipe with 00 flour, San Marzano tomato sauce, Mozzarella di Bufala, fresh basil leaves, and baked at 485 degrees. This Italian recipe is DOCG, Denominazione di Origine Controlla e Garantita, a stamp of approval given by the Italian government to protect wines and food made according to specific traditions. There are other pizzas served in Naples but the Margherita is considered true pizza. Vero’s famous Margherita pizza is included in the custom meal kits.

The Caprese Salad, literally Salad of Capri, an island off the Amalfi Coast, is another marriage of tomatoes, mozzarella and basil. It can be noted that a Caprese is the colors of the Italian flag. A true Caprese is dressed only with olive oil and salt and pepper. In Vero’s Italian recipe the mozzarella is substituted with Burrata, mozzarella with a creamy filling, and it is dressed with olives, peppers and balsamic vinaigrette.

Parmigiana di Melanzane or Eggplant Parmigiana, features layers of eggplant, San Marzano sauce, mozzarella and basil roasted in the oven. Vero’s custom meal kits use a combination of mozzarella and fontina cheese for a creamy texture.

A great wine pairing would be a Aglianico, a local red wine. Aglianico is believed to be one of the most ancient winemaking grapes and has been confirmed as the oldest varietal in commercial production in the world. A nice end to the meal would be a chilled glass of Limoncello, a lemon liqueur from the Amalfi coast accompanied something sweet.
