The Caprese Salad, literally Salad of Capri, an island off the Amain Coast, is a marriage of tomatoes, mozzarella and basil. It offers the best of fresh southern Italian ingredients. It can be noted that a Caprese is the colors of the Italian flag, red, white and green. A true Caprese is dressed only with olive oil and salt and pepper. In Vera's version the mozzarella is substituted with creamy burrata, mozzarella filled with stracciatella, a creamy shredded cheese meaning "little shreds" and it is dressed with olives, peppers and balsamic vinaigrette.

PREP & COOKING INSTRUCTIONS
PREP TIME: 15 MINUTES
STEP 1: Core tomatoes with tip of knife. (The core is the stem and white part.)
STEP 2: Slice tomatoes a ½ inch thick or to desired thickness. Season with salt and pepper. Place tomatoes on serving dish. Do not overlap unless needed.
STEP 3: Remove basil leaves from stem and tear leaves into large pieces. Garnish tomatoes with burrata cheese (you may break the burrata cheese in pieces or leave whole whichever you prefer), olives, Calabrian peppers and torn basil.
STEP 4: Pour balsamic vinegar into bowl. Slowly add olive oil and whisk. Season with salt and pepper.
STEP 5: Dress salad with balsamic vinaigrette. (Shake, stir or whisk before pouring dressing.)
STEP 6: Enjoy your salad!
