Frittata

 

Frittatas are the Italian equivalent to omelettes. They aren't stirred like omelettes but are baked with the ingredients stirred in. The oven puffs them up for an airy texture.

INGREDIENTS

  • eggs
  • goat cheese
  • Tuscan kale
  • roasted red peppers
  • extra virgin olive oil
  • fresh basil
  • aged balsamic

TOOLS

  • chef's knife
  • rubber spatula
  • 10 or 12-inch nonstick skillet
  • medium bowl
  • fork or whisk

PREP and COOKING INSTRUCTIONS

PREP TIME: 5 MINUTES | ASSEMBLE AND COOK TIME: 20 MINUTES

STEP 1 Preheat oven to 400 degrees. Slice red peppers into strips. Remove stem from kale and thinly slice. Crack 10 eggs into medium bowl and whisk. Add salt and pepper.
STEP 2 Heat olive oil over medium heat in nonstick skillet. Add kale and stir until slightly wilted, 1-2 minutes. Add roasted red peppers and stir
STEP 3 Pour eggs into pan and stir. Cook 4-6 minutes or until the egg mixture has set on the bottom of the pan and begins to set on top. Add dollops of goat cheese and place into oven. Bake 6-10 minutes, until lightly browned and fluffy.
STEP 4 Let frittata cool 2-3 minutes. Transfer frittata to cutting board using rubber spatula to loosen from bottom and sides of pan.
STEP 5 Slice frittata into desired amount of pieces and garnish with basil leaves and drizzle with aged balsamic.
STEP 6 Enjoy!

    Serve Mom a Bellini.

    Muddle some berries in the bottom of a champagne flute and pour sparkling prosecco over the top.
