The word Fiori means flowers in Italian. The fiori pasta is the signature pasta of our restaurants, Katie's Pizza and Pasta Osteria. Katie's is one of the only restaurants in the US to have the pasta die that is necessary to make fiori fresh daily. Fiori holds sauces and cheeses well. In this recipe we pair it with a rich lemon cream sauce, pistachios, parmigiano cheese and fresh arugula for color and a refreshing flavor.
- 16oz. fresh fiori
- 8oz. cream
- 1 lemon
- 2oz. butter
- 2 cups fresh arugula
- 1.5 oz shaved parmigiano
- 1oz shelled pistachios
- 6 qt. pot
- large sauté pan
- metal tongs or cooking spoon
- pasta strainer or basket
- grater or zester
- chef knife
PREP TIME: 15 MINUTES
STEP 1: Zest 1 lemon using cheese grater or zester. Need 1 teaspoon (or ½ for a kit for 2).
STEP 2: Juice the same lemon after your zest and remove seeds. Need 2 tablespoons (or ½ for a kit for 2).
STEP 3: “Fluff pasta” – loosen up noodles with fingers before cooking
STEP 4: Fill 6 qt. pot 2/3 of the way with water. Heat water to a rolling boil.
STEP 5: Add 2 tablespoons Kosher salt to boiling water. Water should be salty like the sea.
STEP 5: Crush pistachios by pressing on them with the blade of a Chef’s knife or fine chop.
COOKING TIME: 15 MINUTES
STEP 1: Heat cream in large sauté pan and cook on high heat until it begins to simmer. Once the cream begins to simmer, reduce heat to medium. Simmer for 2-4 minutes, stirring as the cream reduces. The cream will coat the back of a spoon when it’s reduced.
STEP 2: Add lemon juice and butter to cream and stir vigorously to make sure the cream and lemon juice are properly incorporated. Continue to simmer for 2 minutes.
STEP 3: Drop pasta into boiling salted water and give a quick stir to keep from sticking. Cook pasta for 2-3 minutes or until desired al dente.
STEP 4: Turn off heat.
STEP 5: Stir in arugula gently with tongs or spoon.
STEP 6: When pasta has finished cooking, strain and add to sauté pan. Toss or stir your noodles into sauce until all noodles are coated.
STEP 7: Add salt and pepper to taste.
STEP 8: Transfer your pasta to serving dish and garnish with shaved parmigiano, crushed pistachios and lemon zest.
STEP 9: Take a picture of your final dish for posting and enjoy your pasta!
