- 5 lbs Potatoes
- 2 Sticks Butter
- 12 oz. Mascarpone Cheese
- 1 Lemon
- Large Pot
- Grater or Zester
- Large Spoon
- Chef's Knife
- Potato Masher or Wire Whisk
PREP & COOKING INSTRUCTIONS
PREP TIME: 10 MINUTES - COOK TIME: 20 MINUTES
STEP 1: Add water to large pot half way, cover, heat over high. Cut butter into smaller cubes and set aside. Chop Potatoes into cubes and set aside.
STEP 2: Bring water to a rolling boil. Season water with salt, like the sea.
STEP 3: Add chopped potatoes and cook until a fork easily goes through the potatoes. Strain potatoes and pour back into pot.
STEP 4: Add butter, mascarpone and salt and pepper to taste.
STEP 5: Mash until desired consistency. Zest whole lemon into potatoes.
STEP 6: Stir. Keep warm until serving.
A great holiday wine is Lambrusco. Most Lambrusco is produced in the Emilia-Romangna region of Italy. Look for a frizzante, which is slightly sparkling. While Lambrusco is red it is light and effervescent and pairs well with holiday meals.
