- 4 Shallots
- 3 oz. Flour
- 1 Stalk Rosemary
- 1 Stalk Sage
- 4 oz. Butter
- Pan Drippings from Turkey
- 32 oz Turkey Stock
- Chef’s Knife
- Wire Whisk
- Medium Sauce Pan
PREP & COOKING INSTRUCTIONS
PREP TIME: 5 MINUTES - COOK TIME: 10 MINUTES
STEP 1: Peel Shallots and dice, set aside. Chop rosemary and sage, and set aside. Heat butter in sauce pan over medium heat.
STEP 2: Add diced shallots to melted butter. Season generously with salt and sauté until caramelized.
STEP 3: Add pan drippings and herbs. Slowly add flour while whisking quickly to incorporate.
STEP 4: Whisk until clumps are gone. Add Turkey stock.
STEP 5: Simmer on low for 10-20 minutes to reduce and thicken up gravy.
STEP 6: Season with salt and pepper to taste.
A great holiday wine is Lambrusco. Most Lambrusco is produced in the Emilia-Romangna region of Italy. Look for a frizzante, which is slightly sparkling. While Lambrusco is red it is light and effervescent and pairs well with holiday meals.
