Eggplant Parmigiana

A traditional southern Italian dish, Parmigiana di Melanzane or Eggplant Parmigiana, features layers of eggplant, San Marzano sauce, cheese and basil roasted in the oven. Vero uses a mix of mozzarella, fontina and parmigiano cheeses to give this dish a creamier texture.
