Porcini mushrooms and truffles are abundant in late fall and early winter and often appear in a luxurious risotto, which is the creamy rice dish of Northern Italy. Truffles were once hunted by pigs in Italy because of their highly sensitive sense of smell but have been outlawed because they teat up the ground and have been replaced by truffle hunting dogs.
Serves six to eight people.
